My latest Costco find* is a single ingredient that takes a dish from Ordinaire to Extraordinaire.
Pistachios, shelled and ready to toss in a salad, to top a dessert, or give a surprise to a savory dish! My first use: I recalled a Top Chef contestant who braised pistachios, so I made them part of my Rack of Lamb with Pistachio and Raisin Port Sauce.
And happy news from a previous posting: Pistachios are good for you!

I love Costco's Marcona almonds that come in a can. They're cheaper than the ones at chi-chi gourmet markets, and less greasy. I am addicted to them. ;)
