I like to take my lunch to work. With a little thought, I can have something great in little time — and way fewer calories than if I go out. Here's how it went the other day.
My new salad secret is to switch the order. When I put the lettuce in the bowl last, I can focus on the flavor ingredients and wind up with a more interesting salad. Start with a plastic food storage bowl that has a lid. Add your flavors. Leftovers are a salad waiting to happen. I like proteins – leftover meat, nuts, cheese. Not too much. Some tasty vegetables. Don't use too many ingredients. You want the individual elements to all have a role.
On this day, I added some leftover chicken, a few cut up tomatoes, and my new favorite salad fixin' -- shelled pistachios:
Add the greenery. This is a prewashed spring mix from the Farmers' Market. Drizzle just a little vinaigrette on top. I make my own and keep it on hand. Very easy.
Now, the easiest part: Add lid, shake like hell. Here's the result:
Add an apple and an orange and I am good to go.
