Last night, I made dinner that took under 30 minutes and is easy. An old recipe I had forgotten until now.
- Turn on the broiler.
- Put some potatoes or sweet potatoes in a pot with an inch of water and a lid. Bring to boil, then turn to simmer. That will take 20 minutes.
- Mix a couple of tablespoons of dijon mustard (e.g. Grey poupon) and an equal amount of brown sugar.
- Place a salmon fillet on foil, on a cookie sheet or broiling pan. Spoon a thin layer (1/8-1/4") of the mustard-brown-sugar mix over the salmon.
- Broil until the mustard is bubbly and browns in spots, then turn off broiler and close the door.
- About now, the potatoes should be right -- stick a knife in them and it should go in and come out easily.
- Serve.
If you also want a green vegetable, frozen peas heated in the microwave are easy. Or a little salad.
