Some of the most cherished foods (and yes, I count beer as food) are the result of rot! Cheese, dry-aged beef, bread, kimchi, champagne!
I speak, of course, of fermentation, in which invisible critters live, ingest, secrete, and die for us. Sounds yummy, doesn't it?
